Caribbean Shrimp and Quinoa
Jerked foods originated in Jamaica, and involve rubbing meat with a dry or wet spice rub to add flavor and heat. In this case, we’re departing from the traditional jerked chicken or pork and adding a spicy jerk seasoning to shrimp instead. The shellfish is definitely fiery, but the fruity Caribbean quinoa and creamy, rich avocado add balance and depth to the dish. I personally love Busha Browne’s Traditional Jerk Seasoning Rub for the paste in this recipe, but there are other excellent brands on the market, too.
Mexican Street Corn
Mix things up with this summertime staple by swapping your usual buttered corn for elotes, or Mexican street corn. This snack or side dish is traditionally coated in mayonnaise or crema, chili powder, cilantro, and lime, then topped with Cotija cheese or queso fresco. To make it dairy-free, we’ll stick with a mayonnaise mixture and top it off with Dairy-Free Parmesan.
Belgian Waffles
This yummy waffle recipe features pantry staples that you probably already have on hand. To retain crispiness after cooking the waffles, keep them in an oven set to 200°F until they’re all cooked. Top them off with vegan butter and pure maple syrup, or fresh strawberries and Coconut Whipped Cream.
